This page should stay personal. It starts with the Tojiro DP that carried the line-cook years and adds the boring maintenance gear that keeps sharp knives happy.

Tojiro DP VG10 gyuto
The first Japanese knife in the story and the long-term reference point. Still the baseline for value, stainless convenience and gateway-knife realism.

1000 grit stone
The useful starting point. Shapton if low-fuss splash-and-go matters; King if budget and feedback matter more.

Strop or deburring block
A finishing tool, not a belief system. Use it after proper burr removal.

Edge-friendly board
Hasegawa, Asahi or hinoki depending on care tolerance. The board can save more edge life than another steel debate.

Blade guard / roll
A sharp knife rolling loose in a drawer is slapstick until it is not.
