Classic German prep
This article uses published sources. It does not include my own hands-on test.
Published specifications
Wüsthof describes the Classic series as forged from a single piece of steel, with a full bolster. Check the exact model and size: similar names and different lengths appear in retailer searches.
What to check in person
The curved edge profile may suit someone who prefers rocking cuts, but comfort and balance need to be checked in the hand. I have not personally tested this model or established its performance against the other knives here.
Buying considerations
A full bolster is also a long-term sharpening consideration. Keep the heel and the rest of the edge consistent as steel is removed; ask a sharpener for help if the bolster interferes with board contact. Consider a model with a shorter bolster if that matters to you.
Care
Hand-wash and dry the knife after use. Use a stable wood or food-grade plastic board and protect the edge in storage. Avoid bones, frozen food and prying. Follow the maker’s sharpening guidance; a single medium-grit stone can be enough to begin routine sharpening. A strop is optional.
