What this comparison can tell you
I have owned and used a Tojiro DP. I have not run a side-by-side test of these three knives, and I have not personally tested the Victorinox or Takamura models here. Their entries are buying guidance based on the linked product information.
All three are full-size everyday knives. If you prefer a shorter blade, choose the compact option in the [tool finder](/tool-finder/) for 16.5–17 cm santoku suggestions. Try the size in person if you can.
Compare the trade-offs
Victorinox Fibrox extra-wide 20 cm
- Evidence
- Manufacturer specifications; not personally tested.
- Blade
- 20 cm stainless blade; moulded Fibrox handle.
- Why consider it
- My starting point when keeping spending down matters most. Compare the delivered price.
- Main limitation
- Grip comfort and cutting feel have not been tested here. It is still a full-size knife.
- Choose something else if
- You prefer a shorter blade or specifically want a Japanese gyuto.
Tojiro DP / Classic F-808 210 mm
- Evidence
- My own DP ownership; current specifications from Tojiro.
- Blade
- 210 mm; VG10 core with stainless outer layers.
- Why consider it
- My example was thin and sharp out of the box, and I used it as a line cook and afterwards.
- Main limitation
- The spine on mine was not chamfered or polished and could become painful during long sessions.
- Choose something else if
- You cannot check the grip and spine comfort and need it for extended prep.
Takamura VG10 Special 210 mm
- Evidence
- Cleancut’s product description; not personally tested.
- Blade
- 210 mm VG10 gyuto, described by the retailer as very thin.
- Why consider it
- Worth considering if thin geometry is a specific priority and you are comfortable with careful handling.
- Main limitation
- Cleancut warns that the thin edge is sensitive to rough handling and hard ingredients.
- Choose something else if
- The knife will be shared without clear care habits or used for forceful cutting.
My Tojiro experience
I bought my Tojiro DP while working as a line cook during college and kept using it afterwards. It was very thin and sharp out of the box. The spine was not chamfered or polished, and that could become uncomfortable during extended use.
That observation is specific to my knife. The current F-808 is sold under the Classic name as well as DP; the maker’s specification does not establish that its finish is identical to my older example. Ask about spine finishing and try your usual grip if possible.
Choose by the trade-off you accept
For a first purchase with spending kept down, I would start by pricing the Victorinox. For a Japanese gyuto, compare the Tojiro while paying particular attention to comfort. Consider the Takamura when a very thin edge is a deliberate preference and you can give it careful handling.
None is intended for chopping bones, cutting frozen food or prying. If a shared kitchen cannot accommodate basic knife care, agree on those habits before buying a finer edge.
Budget for the delivered price
These are buying priorities, not live price bands. Compare the knife, delivery and any applicable charges as a total. A sale can change the order, and marketplace search results can mix sizes, models and sellers.

Add only what is missing
Keep a suitable board you already own. When you need sharpening gear, one King Deluxe 1000 or Shapton Kuromaku 1000 is enough to start. Learn to remove the burr on the stone before adding a leather strop or finer stone.
I would put comfort, a stable board and basic sharpening practice ahead of completing a matching kit.
