Traditional cutting feel

Limits of this article

This article uses published sources. It does not include my own hands-on test.

Scope of this note

Hinoki is Japanese cypress. A hinoki board is one option for cooks who want a wooden cutting surface and can accommodate its washing and drying requirements. This is a research brief, not my own board test.

A specific starting point

The KAI Seki Magoroku AP5228 is the compact hinoki model in Tool Finder, measuring 36 × 24 × 1.2 cm. Check that there is enough room for the knife and ingredients you use. A compact board can be too small even when it fits easily in the sink.

Care for this model

Follow KAI’s AP5228 instructions: hand-wash, avoid soaking and dishwashers, wipe after washing and dry both faces in the shade. Keep airflow around the board rather than putting it away damp.

Limitations

Soft wood can mark under the edge. Do not treat it as a bone-chopping block; aggressive serrated cuts can damage the surface. I have not measured this board’s effect on edge life or compared its cutting feel with synthetic boards.

Is another board necessary?

Keep a stable wood or food-grade plastic board if it already suits your cooking. Hinoki is an option, not a required purchase alongside a Japanese knife. Compare delivered cost and maintenance needs before replacing a useful board.

Takeaways

  • Check the model, dimensions and maker’s care instructions.
  • Compare the delivered price and keep suitable equipment you already own.
  • This is researched guidance, not a personal test.
