Grip and value
This article uses published sources. It does not include my own hands-on test.
Published specifications
Mercer describes precision-forged construction, German cutlery steel and a Santoprene handle. These are manufacturer specifications, not findings from my own use.
What to check in person
The handle is the main feature I would investigate. Try it in your normal grip and check balance and knuckle clearance. A non-slip material claim cannot establish comfort for every hand.
Buying considerations
Compare the Genesis with the Renaissance if you are deciding between a moulded handle and a more traditional riveted design. Check the exact model, current delivered price and return terms. I have not measured cutting resistance or compared their edges.
Care
Hand-wash and dry the knife after use. Use a stable wood or food-grade plastic board and protect the edge in storage. Avoid bones, frozen food and prying. Follow the maker’s sharpening guidance; a single medium-grit stone can be enough to begin routine sharpening. A strop is optional.
