Toyama Noborikoi in Sanjo

Japanese Natural Stones describes Noborikoi as a line made by Syuuji Toyama in Sanjo. Its account emphasises individual handmade production and variation in dimensions. Those are retailer descriptions, not observations from my own workshop visit or testing.

How to read the range

Check the current knife’s construction rather than applying an older listing to every release. Carbon cores and reactive cladding need wiping and drying. The exact steel and cladding should be stated by the seller.

Before buying

Ask for measurements of the example offered, including length, height and weight. Consider the board space and handling you prefer. Handmade variation is a reason to check those details; it does not by itself establish better cutting or edge retention.

Takeaways

  • Identify the exact model and the source for its maker attribution.
  • Compare dimensions, construction and care needs before buying.
  • This profile provides research context, not measured performance results.
