Mitsuaki Takada’s Sakai workshop

Takada’s official profile describes his time at Ashi Hamono and the establishment of Takada no Hamono in 2018. His work is a useful introduction to the role of the sharpener: grinding and finishing help determine a knife’s geometry as well as its appearance.

How to read the range

Retailers describe thin, convex grinding and finishes including Suiboku. Those descriptions explain what to investigate; they do not establish how an individual knife will cut or release food. I have met Takada-san, but this profile is not a hands-on test of his range.

Before buying

Ask about the exact profile, steel and grind. A finish photograph cannot show the full blade cross-section. Compare spine and choil photographs alongside the retailer’s measurements, and check whether the core and cladding require carbon-steel care.

Takeaways

  • Identify the exact model and the source for its maker attribution.
  • Compare dimensions, construction and care needs before buying.
  • This profile provides research context, not measured performance results.
