Baba Hamono and the Kagekiyo name
I met people at Baba Hamono during my visit to Japan. That is part of my personal interest in the company; it is not a test of the knives. Baba’s own material describes its Sakai background and the establishment of Baba Cutlery Works in 1969.
How to read the range
The catalogue covers different profiles and constructions. A gyuto, yanagiba and deba serve different purposes and require different sharpening approaches. The Kagekiyo name alone cannot tell a beginner which is appropriate for everyday board work.
Before buying
Start with the job and identify whether the knife is double bevel or single bevel. Then check steel, cladding, handedness where relevant, and dimensions. For a wide-bevel knife, ask how the maker or retailer recommends maintaining the bevel geometry before attempting to refinish it.
Takeaways
- Identify the exact model and the source for its maker attribution.
- Compare dimensions, construction and care needs before buying.
- This profile provides research context, not measured performance results.
